  • OXTAIL

    OXTAIL

    As its name implies, this meat dish was originally cut from the tail of Ox. Today it comes from cattle, and is still a tasty local favorite all over Italy. Oxtail is slightly bony, and is often prepared in stew type recipes. When served with potatoes or polenta it makes a delicious and satisfying meal.

    SHRIMP & ARTICHOKE PASTA

    This traditional pasta dish blends two of the most abundant flavors of the Puglia region. Surrounded by the Adriatic and Ionian seas, and rich with agriculture, Puglia is home to many different flavors. Shrimp and Artichokes come together in this recipe for a perfect taste of Giusy's home region.

  • RAPINI

    RAPINI

    Called "Cime di Rape" in Italian, this dish is almost exclusive to the Puglia region, and is often pared with a local pasta called Orrecchiette. Served by itself, with olives, onions and spices, it makes a perfect side dish for all kinds of meats. Rapini, which are in the same family as broccoli, are slightly bitter and are considered an acquired taste.
